Pauline's Grilled Pork Chop Marinade

Pauline has outdone herself with her flavorful grilled pork chop marinade.  Just throw everything in a bowl, wish together, pour into a gallon sized zip-lock bag, add pork chops and let sit for a few hours before grilling and you'll have a flavorful dinner that took very little effort.

Ingredients

2 - 4         Pork chops
1/4 cup    Extra-virgin olive oil
3 Tbsp.    Dark brown sugar (light works also)
1              Lemon, juice
2 Tbsp.    Dijon mustard
4 cloves  Garlic, chopped
1 Tbsp.    Dried thyme
1 tsp.       Onion powder
1 1/2 tsp. Worcestershire sauce
1 Tbsp.    White wine vinegar
1 tsp.       Dried parsley flakes
1 tsp.       Salt
1/2 tsp.    Ground black pepper

Directions

Step 1

Wish all ingredients, except for the pork, together in a metal mixing bowl and pour into a gallon size zip-lock bag.

Step 2 (optional, but recommended for more flavorful chops)

Use a meat tenderizer to puncture holes into both sides of each pork chop.

Step 3

Add pork chops to the bag of marinade, squeeze out excess air, and seal the bag.

Step 4

Marinate in the refrigerator for 6-8 hours.

Step 5

Remove the pork chops from the bag and grill as desired.

Billy Boy's 6-Step Butter Pound Cake

Billy Boy's classic pound cake recipe is buttery soft. Billy had a tendency to eat it right after it was cooked, so you had better get a slice before he ate it all up!  Cut it into thick slices and top with berries and whipped cream for an indulgent and east dessert any night of the week!

Ingredients

2                cups all purpose flour
3 1/2 tbsp. cornstarch
1 1/2 tsp.   salt
2 sticks     unsalted butter softened
1 1/4 cups sugar
1 tsp.         vanilla extract
4                eggs

Directions

Step 1

Preheat an oven to 325 degrees and line a 9x5 inch loaf pan with parchment paper.

Step 2

Beat the butter until soft and creamy in a stand mixer or hand mixer. Gradually add the sugar and mix until light and fluffy. Add the vanilla and mix. Add the eggs one at a time mixing well between each one and scraping down the sides of the bowl as needed.

Step 3

Sieve the flour and cornstarch together and slowly add to the batter on low speed until incorporated into the batter.

Step 4

Scoop the mixture into the prepared cake pan and spread out evenly.

Step 5

Bake in the oven for 20 minutes at 325 degrees and then increase the temperature to 350 degrees for the remaining 55 minutes or until the center of the pound cake feels firm and no longer liquid.

Step 6

Let cool before slicing and serve with whipped cream and berries.

Hattie Pearl's Chocolate Peanut Butter Ramen Noodle Bars

Who needs Rice Crispy Treats? You can make these healthier bars with crunchy ramen noodles and cover them with melted chocolate chips.

Ingredients

6 tbsp.   salted butter
7 cup     miniature marshmallows
1 tsp.     vanilla extract
⅔ cup    creamy peanut butter
4 (3 oz) pkgs. ramen noodles, dry, no seasoning, and broken apart
3 cups    rice cereal
1 cup     semisweet mini-chocolate chips

Directions

Step 1

Spray a 9x13-inch glass baking dish with non-stick cooking spray.

Step 2

In a large saucepan melt the butter. Add marshmallows and stir until melted and smooth. Stir in vanilla extract then remove from heat.

Step 3

Combine peanut butter into marshmallow mixture. Fold in the ramen noodles and rice cereal until well combined.

Step 4

Press mixture into prepared pan. Cool 15 minutes.

Step 5

Melt mini-chocolate chips in a microwave until melted and smooth. Drizzle on top of bars. Let set and then cut into desired sized bars (about 24).
